Ingredients
  • 1 13.5-ounce can coconut milk
  • 2 medium tomatoes, chopped
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • Fresh vegetables and meat
  • 1 tablespoon curry paste
  • ½ cup water or broth
  • 3 tablespoons olive oil

Preheat a thick skillet over a medium heat. Add olive oil and saute onions. Cook for 1 minute and stir in garlic. To this, add chopped tomatoes, put lid and cook for 2-3 minutes. Ingredients
  • 1 can light coconut milk
  • 4 skinless, boneless chicken breast halves
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger
  • 3 tomatoes, seeded and chopped
  • 2 jalapeño peppers, seeded and chopped
  • 1 bunch chopped fresh parsley
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Take a medium-sized mixing bowl and combine the ingredients - cayenne pepper, cumin, turmeric and coriander. Put the clean chicken pieces in this bowl and season with salt and pepper. Coat the chicken pieces with the spice mixture evenly from all sides and set aside. Now, preheat 1 tablespoon olive oil in a thick skillet over medium high heat. Cook chicken for 10-15 minutes per side, or until you get the desired consistency. Remove the cooked chicken and return skillet to the gas burner. Pour the remaining oil in the preheated skillet and saute onion, garlic, ginger and jalapeño pepper. After cooking for 5 minutes, stir in tomatoes and cook till they are done, about 5-6 minutes. To this vegetable mixture, stir in coconut milk and cook in a low heat for 5 minutes. Add chicken and garnish with parsley.
