This is the most basic pancake recipe. If you have never made pancakes, you could start with this recipe of pancakes from scratch.
- All-purpose Flour 5 cups
- Baking Powder 7½ tsp
- Sugar 8 tsp
- Milk Powder 1¼ cup
Mix all these ingredients and store it in an air tight container. So, now how to make pancakes? When you need to make the pancakes, take about a cup of this mix and add about two third cup of water to it. Mix well and make pancakes. Serve with whipped cream and syrup.

- All-purpose Flour 12 cups
- Non Fat Dry Milk 3 cups
- Sugar ¾ cup
- Baking Powder ¼ cup and 2 tsp
- Salt 1 tbsp
Mix all the ingredients wells and store it in an air tight container in a cool place. While making these homemade pancakes, take 2 cups of this pancake mix, 1 egg and enough milk to make the batter in the required consistency. Beat the egg and add the pancake mix in it. Mix thoroughly and add milk to the batter, slowly, till you reach the desired consistency of the batter. Pour dollops on a hot fry pan and enjoy with syrup or butter.
The fluffier the pancakes the more exciting and tasty they are to eat. Read the following paragraphs for more on how to make pancake mix fluffy and tasty.
- All-purpose Flour or Cake Flour 4 cups
- Baking Powder 7 tsp
- Sugar ½ cup
- Skim Milk Powder 1 cup
- Baking Soda 2 tsp
Instead of just mixing all the ingredients and storing them in a box, what needs to be done to make it fluffy is sift the flour and keep it aside. Sift the baking powder along with the baking soda and add it to the flour. Ensure that the sugar is powdered and sifted too. Finally, add the milk powder to the pancake mix and mix the entire mixture well. While making pancakes, take a cup of this mix and add to it a very well beaten egg and milk mixture. This will make the pancakes very light and fluffy. Another way to make the pancakes fluffy is to use a balloon whisk and a large bowl while mixing the eggs and milk for pancakes. If you prefer pancakes without eggs, you can use melted butter. Adding oil to your pancake batter will also make the pancakes fluffier.
In order to make better pancake mix, use cake flour. Caster sugar instead of granulated sugar will also make a good pancake mix. Sifting the flour and sugar along with the baking soda and powder will not only make the mix fluffy but will also make it better as the mix becomes soft. If possible try to sift the milk powder too. Do not beat the mixture vigorously as the baking powder and soda do not work well if they are mixed too much. While making any of the above homemade pancake recipes, mix the mixture in water or milk and eggs and store it in the fridge for at least ½ hour before making the pancakes. Do not make the pancake batter runny. This is why you need to add the liquid slowly.
Some points to remember - store the mix in an air tight container and store the container in a cool and dry place. Ensure that you use up the mixture within a few months. Remember that homemade pancake mix is always better than the ready-made ones. Happy eating!!
