Savory Bread Pudding Recipes

Recipe #1: Using Tomato

Ingredients
  • Raisins - ¼ cup
  • White Zinfandel wine - ¼ cup
  • Brown sugar - 3 tablespoons
  • Diced tomatoes (drained) - 2 cans (14.5 ounce)
  • Worcestershire sauce - 1 teaspoon
  • Fresh basil leaves (chopped) - 3 tablespoons
  • Cayenne pepper - 1 pinch
  • Butter - ¼ cup
  • Day-old bread (cubed) - 1 loaf (1 pound)
  • Monterey Jack cheese (shredded) - 1 cup
Procedure

To prepare this recipe, first preheat the oven to 400 degree Fahrenheit. Take a 9 by 13 inches baking dish and grease it with cooking spray. In a small saucepan add wine, raisins, brown sugar, Worcestershire sauce, basil, cayenne pepper and tomatoes. Mix these ingredients and simmer the mixture over medium-low heat for about 10 minutes. In another large skillet, put butter and place it over heat. Once the butter melts, put the bread cubes in it and coat them with melted butter. Then toss the coated bread cubes in Monterey Jack cheese and put them in the baking dish. Then, pour the tomato mixture over these coated bread cubes and bake them in the preheated oven for about 25 to 30 minutes.

Recipe #2: Using Mushrooms and Sausage

Ingredients
  • Canola oil - 1 tablespoon
  • Sliced white mushrooms - 1 package (8-ounce)
  • Sweet Italian sausage - ½ pound
  • Eggs - 4
  • Milk - 2 cups
  • Italian seasoning - 1 teaspoon
  • Salt - ½ teaspoon
  • Fresh ground black pepper - ¼ teaspoon
  • Cubed baguette - ½
Procedure

Take 12 muffin cups, grease them with cooking spray and keep them aside. Pour the canola oil in a large skillet and place it over medium heat. Put the mushrooms in the heated oil and saute them. Then, add the sausage and stir the mixture until the sausages are cooked and turn brown. In another large bowl, whisk together milk, Italian seasoning, eggs, salt and pepper. Then, add the bread cubes in the egg mixture and keep the bowl to refrigerate for about 30 minutes. Remove the egg mixture from the refrigerator and combine this mixture with sausage-mushroom mixture. Transfer this pudding mixture into muffin tins and bake them in a preheated oven at 325 degree Fahrenheit for about 30 minutes. Your bread pudding with sausage and mushrooms is ready to eat.
